Summer is finally here and has brought temperatures in the 90s where I live. I know its been super hot throughout the country, even hotter than it is here so I really shouldn’t complain. I’ve got an inside job, air conditioning, ice water, and popsicles to keep me cool! Today I’m going to share with you our new favorite triple berry smoothie popsicles recipe so you can keep cool too!
Before we get to the new recipe, I thought it might be fun to give you an idea of what it’s like behind the scenes on a recipe development day. I’ve definitely found that it is a much more efficient use of my time and grocery money to develop 2 or more recipes at the same time. I can get everything I need shopping one day, then spend the next day developing recipes, testing them, and photographing the ones that turn out well. My goal would be to have one of these recipe development days every other week. Honestly, the shopping for all of the ingredients is super fun for me – I’m definitely a shopper!
First I made a list of the recipes I wanted to work on. I knew I wanted to make these popsicles using fresh berries, so I thought about a few other recipes I could work on that used fresh berries as well. I’ve been working on my gluten-free triple berry coffee cake for a while and just needed to remake for photos so it went on my list. The third recipe I worked on was an angel food cake with berries (which unfortunately didn’t turn out!)
Since I knew the popsicles would need a few hours to freeze, they were the first recipe I worked on for the day.
To start off, I rinsed all of the berries and laid them on 2 layers of paper towels for the excess water to drain off. I chose strawberries, raspberries and blueberries for these but you can use 2 cups total of your favorite berries to customize the flavor of these pops! Later in the summer, when our blackberries are ripe, I’ll use them in place of blueberries. You could also use frozen berries to make these, but you might need to let them thaw a bit in order for your blender to handle them. (Note: if you do thaw them, don’t discard the juices! Add those in too!)
How to make these berry smoothie popsicles:
To my blender, I added the 2 cups of fresh berries, 1 cup of lowfat vanilla yogurt, and a tablespoon of honey. You could also use Greek yogurt or even a non-dairy yogurt alternative to make these dairy-free.
Blend the mixture up until smooth. I use the smoothie setting on my blender, which makes it easy! I suggest tasting the mixture and adding more honey if needed to make it as sweet as you like. Since I was using a vanilla yogurt and my berries were flavorful, I didn’t need more than a tablespoon of honey in mine.
Once the mixture is smooth and sweetened to your taste, pour the mixture into your popsicle molds. I set mine up on some paper towels to collect any drips since I don’t always have a steady hand when pouring.
After placing them in the freezer for about 4 hours, we were ready to head outside to enjoy! I packed up a tray with ice water, cups, the popsicles and paper towels for cleaning up the mess. Are my kids the only ones that make a sticky mess out of popsicles? I doubt it!
Of course my boys had to act like theirs were light sabers…
My family loved these! Fruity, a bit creamy, cool and refreshing!

Oh, and to finish my story about what a recipe development day is like around here, I’ve got to show you the other results: the dishes!! This is after starting 3 new recipes plus baking a loaf of bread in my bread machine. This is actually just the first round of dishes. Later I still had the popsicle molds, cupcake tins and frosting bowls too!
